But if you are searching for knives over $250 then it is worth researching a bit more. Also by that time you should know whether you like European versus Japanese-style knives and you should also know how to maintain your knives. A $400 knife poorly maintained isn&#039;t that great of knife, but a $50 knife well maintained can be a very good knife.</description>
