How to Sharpen Knives

Knowing how to sharpen knives is an important skill to have in the kitchen. Sharp knives make your cutting, slicing, and dicing easier and more efficient. You can sharpen knives with a honing steel, whetstone, or electric knife sharpener.

Honing Steel Method

A honing steel is a metal rod with ridges running along it. It helps straighten and realign the blades of knives. To sharpen a knife with a honing steel:

  • Hold the honing steel in your dominant hand and the knife in the other.
  • Place the heel of the knife against the honing steel at a 20-degree angle.
  • Slide the blade up and down the honing steel in a sweeping motion.
  • Alternate sides of the blade with each stroke and continue until the blade is sharp.

Whetstone Method

A whetstone is a flat stone that’s been treated with an abrasive material, usually diamond or ceramic. To sharpen a knife with a whetstone:

  • Soak the whetstone in water for 10 minutes.
  • Lay the whetstone on a cutting board or other stable surface.
  • Hold the knife in your dominant hand and the whetstone in the other.
  • Place the blade of the knife against the whetstone at a 20-degree angle.
  • Move the blade in a sweeping motion away from you along the whetstone.
  • Alternate sides of the blade with each stroke and continue until the blade is sharp.

Electric Knife Sharpener Method

An electric knife sharpener is a device with rotating blades, slots, and abrasive wheels. To sharpen a knife with an electric knife sharpener:

  • Plug the electric knife sharpener into a power source.
  • Place the heel of the knife against the sharpening slot.
  • Slowly pull the knife through the slot and hold it for a few seconds.
  • Repeat on the other side of the blade.
  • Continue until the blade is sharp.

Learning how to sharpen knives is a valuable skill and can be done with a honing steel, whetstone, or electric knife sharpener. For more information about sharpening knives, check out Wikipedia’s article on Sharpening or Knife Sharpening.
