Delicious Wellington Beef Recipe

Ingredients:

  • 1 center-cut beef tenderloin (2 to 2 1/2 pounds), trimmed of fat
  • Kosher salt and freshly ground black pepper
  • 2 tablespoons vegetable oil
  • 4 tablespoons (1/2 stick) unsalted butter, at room temperature
  • 2 cups chopped yellow onions (2 onions)
  • 1/2 cup minced shallots (2 large)
  • 2 tablespoons minced garlic (6 cloves)
  • 1/4 cup Cognac or brandy
  • 1 package (2 sheets) puff pastry, defrosted
  • 1/2 cup Dijon mustard
  • 1/4 cup chopped fresh parsley leaves
  • 1/2 pound prosciutto, sliced thin
  • 1 egg beaten with 1 tablespoon water, for egg wash

Directions:

  1. Preheat the oven to 450 degrees F.
  2. Pat the beef dry with a paper towel. Season the steak all over with salt and pepper.
  3. In a large skillet, heat the vegetable oil over high heat until very hot. Add the beef and sear for two (2) minutes until a deep brown crust has formed. Rotate the meat and sear the other side for two minutes.
  4. Remove the skillet from the heat and let the beef cool to room temperature. Then, chill in the refrigerator for 10 minutes.
  5. While the meat is cooling, prepare the mushroom mixture. In the same skillet, melt the butter and add the onions and shallots. Sauté for 5 minutes, stirring occasionally, until the onions turn translucent. Add the garlic and cook for 1 more minute. Add the Cognac and ignite with a match to burn off the alcohol.
  6. Scrape the mixture into a bowl and let it cool to room temperature.
  7. Lay out one (1) pastry sheet on a floured surface. Spread a layer of mustard over the pastry and sprinkle with parsley. Arrange the prosciutto slices on top in a single layer, covering the pastry. Spread the mushroom mixture over the prosciutto, leaving a 1-inch border around the edges.
  8. Remove the beef from the fridge. Place it on top of the mushroom mixture.
  9. Wrap the steak in the pastry, cutting off excess dough on the ends. Seal the edges with the egg wash and turn the beef Wellington seam-side down on a baking sheet.
  10. Brush the top with the beaten egg wash and cut 5 to 6 steam vents in the top of the pastry.
  11. Bake for 20 minutes, then lower the oven temperature to 375F and cook for another 15-20 minutes, or until the internal temperature reaches 125F for medium rare.
  12. Remove from oven and let it rest for 10 minutes before slicing into thick portions (1/4-1/2 inch thick).

This wellington beef recipe is not only delicious but also easy to make, you can serve it on special occasions, enjoy!
